Baked Rainbow Chips Recipe

These beautifully colored “rainbow” potato chips make a fun alternative to regular chips that are usually processed and cooked with unhealthy fats and salts. Because they’re baked with olive oil, you can enjoy all of the crispness you know and love without all of the unhealthy extras! Kids will love looking at the different colors, washing and scrubbing the potatoes, drizzling the olive oil, and stirring the bowl.

INGREDIENTS

  • 3 -4 medium potatoes, peeled (look for purple potatoes, orange sweet, red, and yukon gold

  • salt and black pepper

  • 1 or 2 tbsp oil

DIRECTIONS

  • Gather a variety of “rainbow” colored potatoes. 3-4 medium to large sized potatoes works best. We recommend red potatoes, purple potatoes, orange sweet potatoes, and yukon gold potatoes.

  • Preheat oven to 450 F. Line a baking sheet with aluminum foil or parchment paper.

  • Peel and cut the potatoes into 1/8-inch thick (very thin) round slices.

  • In a pot of boiling water cook the potato slices for 3-5 minute. Drain, and combine in a bowl with olive oil, and a few shakes of salt and pepper to taste.

  • Spread the potato slices on the prepared baking sheet in one layer. Bake for about 15 minutes or until crisp. Carefully remove from oven and allow to fully cool before serving.
