Crunchy, Colorful Coleslaw

This recipe isn’t just delicious, it’s healthy, kid friendly, and fun to make on your own, with your class, or children at home!

The crunchy bits of coleslaw, combined with the sweet and tart raisins and apples make this dish a crowd pleaser. Not to mention, the bright colors of the purple and green cabbage are visually appealing for even your pickiest eaters! It’s also mayo free - making it a wonderful alternative for those with allergies or specific diets.

Ingredients

  • 1/2 cup raisins

  • 2 tablespoons fresh lemon juice

  • 1/2 head of purple and green cabbage, shredded or sliced thin

  • 2 apples cored and cut into chunks (we love Red Delicious!)

  • 1 tsp salt

  • 2 tablespoons honey

  • 2 tablespoons extra virgin olive oil

In a large bowl, stir together the raisins, lemon juice, and honey. Add the cabbage, apples and olive oil, then toss to combine. Taste and season with the salt. Cover and refrigerate at least 1 hour before serving. Optional: add chopped carrots, avocado, walnuts, or almonds!
